Step 1
In a food processor, blend mayonnaise and chipotle peppers. Add lime juice to taste, and chill in the fridge.
Step 2
Chop white onion, cilantro, slice jalapeño thinly, and set aside.
Step 3
Wrap tortillas in foil and heat in oven at 350°
Step 4
Season shrimp with salt, black pepper, chili powder, garlic powder, and stir in 1/2 tsp of lime juice.
Step 5
Heat oil in a nonstick pan and cook shrimp over medium heat (about 2-3 minutes per side).
Step 6
Assemble tacos with shrimp, chipotle mayo, and onions, cilantro, and jalapeño.
