Step 1
In 9-inch microwavable pie plate, place beets, overlapping slightly.
Step 2
Add 1/4 cup water

cover with microwavable plastic wrap.
Step 4
Microwave on High 4 to 5 minutes or until almost tender when pierced with fork; drain.
Step 5
In small bowl, beat oil and vinegar with whisk until blended.
Step 6
Divide salad greens among 4 plates; top with beets.
Step 7
Drizzle evenly with dressing; sprinkle with onion and cheese.
