Instructions

Step 1
1. Make the dressing: In a large mixing bowl, add 3 tablespoons olive oil, 2 tablespoons balsamic vinegar (or lemon juice), ½ teaspoon salt, 1 tablespoon honey or sugar, 1 tablespoon whole grain mustard, and a pinch of black pepper. Whisk well until smooth and combined.

2. Prepare the shrimp: Defrost the shrimp, place in a microwave-safe dish, and microwave for about 2 minutes. Drain any extra water and let them cool completely. (If using chicken, cook fully and slice into bite-size pieces.)

3. Slice vegetables and fruits: Cut ½ cucumber, some red onion, bell pepper, lettuce, apple, and tomato into thin bite-sized strips or slices. If using orange, remove the peel and cut into small segments.

4. Cut the rice paper: Stack 3–4 large rice paper sheets, cut them in half, then into thin strips. Some brands may crack easily, so test with one sheet first. You don’t need to soak them.
Step 5
5. Toss the salad: Put the rice paper strips into the bowl with the dressing and toss gently so they absorb the flavors. Add all the sliced vegetables, fruits, and shrimp. Mix gently

6. Serve and enjoy: Transfer to a serving plate. The rice paper will become soft and chewy while keeping a nice texture even after a while. Perfect for hot summer days or when you want a light, refreshing meal.
