Instructions
Step 1
Cream your room temperature butter and brown sugar. Whisk in the vanilla, pumpkin purée, and eggs.
Step 2
Sift in your flour, leavening ingredients, toasted milk powder (if using), and spices. Fold to combine, and set aside.
Step 3
For the cream cheese mixture, whisk together the cream cheese, sugar, and vanilla. Transfer to a piping bag.
Step 4
Scoop the pumpkin batter into a cupcake/muffin pan. Place the piping bag of the cream cheese in the center of the muffin and squeeze until you see the cream cheese in the middle. Bake at 350f for 25-30min or until a skewer inserted comes out clean.
Step 5
Let the muffins cool down, and then brush maple syrup on top and sprinkle the pepitas on top. Enjoy!
