Instructions

Step 1
Top and halve peppers, layer into bottom of mason jar.

Slice fennel build into thin rounds and layer on top of peppers

Peel pears and cut into slices. Layer on top of fennel.
Step 4
Top up jar with the brine, ensuring that all ingredients are covered. Weigh down the ingredients if necessary.
Step 5
Place jar in a cool, dark place for 4-6 weeks. ‘Burp’ the jar from time to time if required.
Step 6
Using a sieve, strain the solids from the brine, reserving the brine for later.

Place the solids in a blender. Add about 1/4 cup of the brine and 1/4 cup of the vinegar. Blend.

Taste, and adjust brine and vinegar to desired balance and consistency. Continue to blend as necessary.
Step 9
(Optional) For a smoother consistency, run blended mixture through a food mill.
