Ingredients

300gpenne pasta
4cloves of garlic
4 Tbspbalsamic vinegar
1can chopped tomatoes
0.25 Cparmesan cheese
grated

Instructions
Step 1
Cook the pasta according to the packet instructions.
Step 2
Place the ‘sauce’ vegetables and chilli flakes into a processor and blend until a rough paste, add in the sausage, fennel and thyme, keep pulsing until well mixed. Transfer this mixture into a large frying pan on a high heat with the oil. Cook for 6-7 minutes, breaking up any lumps.
Step 3
Crush 4 unpeeled cloves of garlic into the sausage mixture and stir in the vinegar and the tomatoes. Cook for a further 20 minutes or until the sauce has thickened.
Step 4
Drain the pasta, reserving a cup of the cooking water. Tip the pasta into the pan of sauce and give it a gentle stir, adding enough of the cooking water to bring it to a thickened saucy consistency.
Step 5
Season to taste and serve with Parmesan grated all over.
