Creamy Veggie Chicken with Mashed Cauliflower

Ingredients
6 servings

1 ½ cupWater

2 tspChicken Base
Roasted

1 TbspCorn starch

1 tspSpices
ground

sage

0.5pepper
med, Raw medium orange

3.5 ounceMushrooms
Baby Bella, Crimini, Raw

2 fluid ounceHeavy whipping cream

1.5cauliflower
whole medium, 5-6 inch diameter, Whole Head of Cauliflower Steamed

¾ cupCream Cheese

salt
to taste

pepper
to taste
Instructions
Step 1
Mashed Cauliflower: Steam cauliflower until soft. When done cooking, add cauliflower, cream cheese, 2 tbsp butter into a bowl. Added S&P to taste. Puree until smooth using a stick blender or hand mixer. Keep warm until ready to serve.
Step 2
In a large frying pan, add 3 tbsp. butter. Add sliced onions, pepper and carrot. Sauté until al dente. When done, remove from pan and set aside.
Step 3
Add diced chicken to frying pan and cook until done
Step 4
Add chicken broth, cooked veggies, spices and salt and pepper to taste. Bring broth to a boil and cook 8 to 10 mins.
Step 5
Add heavy cream and mix cornstarch with a small amount of water to make a slurry. Add it pan and cook until broth thickens.
Step 6
Serve creamy chicken and veggies over mashed cauliflower. Enjoy.
