Instructions
Step 1
01 Preheat oven to 400 degrees F.
Step 2
In a bowl, beat together eggs, milk, and pinch of salt and pepper and set aside.
Step 3
Slice bacon into 1/2-inch pieces.
Step 4
Peel and dice onion.
Step 5
Cut cherry tomatoes in half.
Step 6
Chop kale into bite-sized pieces, discarding the tough center ribs and stems.
Step 7
In a large oven-proof skillet over medium heat, cook bacon until fat renders, about 5 minutes.
Step 8
Add onion and cook until they begin to caramelize, about 4 minutes more.
Step 9
Add cherry tomatoes and kale.
Step 10
Cook 30 seconds and pour egg mixture into pan.
Step 11
Sprinkle shredded mozzarella on top.
Step 12
Place pan in preheated oven and cook until edges begin to brown and pull away from sides, 5 to 8 minutes.
