½ cupmilk
or 1/4 cup yogurt + 1/4 cup water

salt

pepper
to taste

2red bell peppers
thinly sliced

1yellow onion
large, thinly sliced

3 cupsfresh spinach

¼ cupparmesan cheese

⅓ cupfresh goat cheese

olive oil

Beat, season with salt and pepper and set aside

Instructions
Step 1
1. Beat eggs with milk. Add parm/salt/pepper 2. Lightly Drizzle red peppers in olive oil. Broil/roast in oven until soft 3. Sauté sliced onion in olive oil until caramelized. Add fresh spinach and mix well, turn off heat and let spinach soften from warmth of onions. Season well with salt and pepper. Add roasted bell pepper to the mix. 4. Grease a baking dish with olive oil and pour egg mixture into pan. Place in 350deg oven for about 5-7min or until bottom of eggs start to solidify. 5. Add pepper/onion/spinach mixture. Spread evenly 6. Bake for another 15 minutes before adding goat cheese. Crumble evenly across the top. 7. Continue baking until eggs are set (no wiggle) and bottom looks browned.
