Instructions
Step 1
Start by grabbing a cutting board, knife, and your brussel sprouts. Chop the ends off of the sprouts and begin removing the leaves, adding them to a bowl, while putting any bad leaves, the ends, and the cores into the compost (or you can cook the cores as well).




Step 2
Once you have all the leaves in a bowl, rinse them like you would lettuce. (I rinse them in cold water then add them to a salad spinner then transfer to a bowl.)
Step 3
If you have a small amount of brussel sprout leaves, now would be the time to pre-heat the oven to 400° Fahrenheit.

Step 4
Once the brussel sprouts are rinsed and in a bowl, add the olive oil and seasonings. You can gage how much olive oil you need, but you just need enough to cover all the leaves. The main seasonings are salt and pepper (I always add more pepper), and even those are for you to customize. Some other spices I like are paprika, cayenne pepper, and chilli powder.





Step 5
If you have a large amount of the brussel sprout leaves, now would be the time to pre-heat your oven to 400° Fahrenheit.

Step 6
Spread the leaves in a single layer on a large baking sheet with parchment paper. (It is important to lie them flat in a single layer, this way they will all cook as evenly as possible.) Note this process is quite tedious.


Step 7
Roast until leaves are browned and crispy. (I have found the perfect time is 15 minutes.)
Step 8
Serve and eat immediately.
