Spinach, Black Bean, and Avocado Quesadillas!
Super easy, just sauté onions with spinach and taco seasoning and added in canned black beans. Spread mashed avocado (season with salt and lime if you want!) on one side of a tortilla, top with black bean mixture and cheddar cheese, top with other tortilla, and cook in a pan with oil for a few minutes on each side.
