Instructions
Step 1
π½ Dice 5 garlic cloves. Heat a splash of olive oil and pan-fry until soft.


Step 2
π½ Drain the tin of sweetcorn and set aside.

π½ Scoop out the avocado flesh and mash it in a bowl

π½ Grate your Cheddar

π½ Place a non stick frying pan (skillet) on the hob over a medium-high heat. Put one tortilla in the pan and fill it with a quarter of cooked garlic, smashed avocado and some sweetcorn - spread on only one half of the tortilla. Sprinkle over some grated cheese.
Step 6
π½ Fold the tortilla in half, cook until the bottom is brown (around 2 minutes) and flip to brown the other side for another 2 minutes. Remove to a plate.
Step 7
π½ Repeat for the remaining tortilla. Slice each tortilla in half and serve!
