Instructions
Step 1
Preheat the oven to 350 degrees F. Lightly oil a medium-sized baking dish.
Step 2
Whisk the sauce, mascarpone cheese, chopped pepperoni, parsley and thyme in a large bowl to blend
Step 3
In a stock pot or deep saucepan, boil the water. Once boiling, add salt, a bit of thyme, and one(-ish) clove of garlic, mashed or finely chopped.
Step 4
Cook the tortellini in the large pot of boiling water until just tender, about 4-5 minutes. Drain
Step 5
Add the tortellini to the sauce and toss to coat. Transfer the tortellini mixture to the prepared baking dish.
Step 6
Top the mixture with the smoked mozzarella and Parmesan cheeses.
Step 7
Cover and bake until the sauce bubbles and the cheeses on top melt, about 30-50 minutes.
Step 8
Remove foil and let cool for a few minutes. Serve with bold Chianti or your preferred red.
