0.5 Cinstant mashed potato flakes
0.25 C A PFlour
1 Tbspdry milk powder
½ tspbaking powder
¼ tspbaking soda
¼ tspsalt
2 Tbsponion
chopped
2 tspchives
chopped
1 ozshredded cheddar cheese
½ tspgarlic powder
1 pinchsalt
1 pinchpepper
1 pinchpoultry seasoning
0.75 CKefir
½ cwater
1egg
large, beaten
1 Tbspextra-virgin olive oil
for batter
1 Tbspavocado oil
1 tspunsalted butter
Instructions
Step 1
1 whisk together dry ingredients
2 whisk together wet ingredients
3 combine dry and wet ingredients, stirring just until lumps are smoothed. Let the batter rest 5 to 20 minutes, then stir in grated cheese
4 Heat the avocado oil and butter over med fire until it shimmers
5 Using a 1/4-C scoop, to place batter in hot skillet and form pancakes. Cook each pancake until lightly browned on each side
