Pea, mint and baby spinach salad

Can't get any easier than two steps done in 5 minutes! Looks sensational and tastes even better. Add dried red currents, or pomegranate seeds or crumbly feta for a bit of colour.

Step 1
Cook all the peas in boiling salted water for 2-3 minutes until tender. Refresh in cold water and drain.
Step 2
Whisk dressing ingredients together in a bowl, then toss with peas, spinach, mint and onion when ready to serve.
