Instructions

Step 1
Combine marinade ingredients in a small bowl

Marinate cut chicken for 1-2 hours

Chop veggies

Start rice before cooking chicken and preheat oven for tortillas

Heat large cast iron to medium heat

Coat bottom with 1/2 tbsp olive oil

Cook chicken until sides are lightly golden brown (about 6-8 mins); put the chicken aside

Add the veggies to the empty pan and cook until charred (about 10 mins), adding salt, pepper, or oil as needed

While veggies are cooking, heat beans in the microwave and tortillas in the oven
Step 10
Remove veggies from heat and combine with chicken
