Emma's Pasta Faggioli Soup

4cloves garlic
5 cupsno sodium chicken stock
2 x 15 ozcan Cannelloni beans
rinsed and drained
15 ozno salt diced tomatoes

15 ozno salt tomato sauce

½ TbspRosemary
½ Tbspthyme
½ Tbspparsley
½ Tbspbasil
2 cupsditalini pasta
½ cupParmesan cheese
for garnish

Instructions
Step 1
Slice Ham steak into bite size pieces and set aside.

Step 2
Dice Onion, Carrots, and Celery into small bite size pieces. Add to a pot with a tbsp of olive oil, rosemary, thyme, parsley, and basil. Stir frequently until veggies are almost fork tender.

Step 3
Add in garlic and Cook until garlic is fragrant.

Add ham and combine with vegetables. Cook for 5 minutes

In a separate pot bring water to a boil and add in your pasta. Cook as per packaging instructions.

Stir in Chicken stock, diced tomatoes, and tomato sauce. Bring to a boil and then turn heat down to a simmer for 10 minutes or until vegetables are fork tender.

Step 7
Once pasta is cooked to your liking, drain and set aside with a drizzle of olive oil so it doesn't stick. Leave pasta separate from the soup this way the pasta does not absorb all the liquid or over cook
Step 8
Add pasta and soup to a bowl, garnish with parmesan cheese ( to lower to sodium you can leave this out) and serve.
