Step 1
Preheat oven to 200 degrees celsius (400 degrees Fahrenheit).
Step 2
Place a piece of parchment paper on oven-safe tray or pan. Add all vegetables and toss with olive oil, thyme and salt & pepper. Top with sliced lemons.
Step 3
Roast in oven for 30-45 minutes turning 1/2 way through
