Instructions
Step 1
Preheat oven to 190C (fan)
Step 2
Cut aubergines lengthwise and make cross cuts on the flesh.
Step 3
Transfer them to the ovenproof baking dish, greased with 1tbsp olive oil(cut side up)
Step 4
Brush them with the remaining oil and season with salt, pepper, Mediterranean spice mix and garlic granules if desired.
Step 5
Roast for 25-30 minutes or until golden.
Step 6
When ready, using a spoon firmly press the flesh, to create a groove.
Step 7
Fill in aubergine halves with 1tsp tomato paste and top with shredded mozzarella.
Step 8
Bake for another 5-7minutes or until cheese is melted.
Step 9
Garnish with basil leaves and enjoy!
