Instructions
Step 1
Slice the leek into thin rounds.
Step 2
Heat a little olive oil in a large pan, add the leek and cook for 4-5 minutes, until softened.
Step 3
Meanwhile, crack the eggs into a bowl and whisk them well.
Step 4
Season with salt and pepper.
Step 5
Add the eggs to the leeks and stir gently, keeping the mixture moving, to make a lovely leek-filled scramble.
Step 6
Place the smoked salmon slice in the centre of your serving plate, and pile the leek scramble on the top of it.
