Step 1
Peel and devein 1 lb of shrimp and season with salt and pepper.
Step 2
Coat the shrimp with cornstarch. Set aside for later.
Step 3
Make your sauce. Start by dissolving the sugar in the water and once its fully dissolved, add the vinegar, garlic, paprika, fish sauce, and dried chili flakes. Let it simmer for 5 minutes.
Step 4
Then add your slurry and bring it to a boil to activate the cornstarch.
Step 5
Let it cool down for 10 minutes before adding the mayo, Sriracha and salt. If you add the mayo while the sauce is too hot, the mayo will break, and the sauce will become very oily. You don’t want that.
Step 6
Pan fry the shrimp in 350 F oil and fry each side for 1-2 minutes.
Step 7
Using a separate bowl, toss in the shrimp with the sauce. Garnish with spring onions or chives. Enjoy!
