Sweet & Spicy Shrimp Stir-Fry

A charred shrimp that’s been tossed with a Sweet & Spicy Sauce, gives you the multidimensional flavour, quite easy to make. It is Absolutely Sensational and fuss-free summertime dinner, served over a bed of rice and veggies.

Shrimps Ingredients:
1kgshrimp
large, peeled, deveined
1 cupcornstarch
salt
to taste
½ teaspoonblack pepper
3eggs
large, beaten
vegetable oil
for frying
Spicy Sauce Ingredients:

Step 1
Over medium heat, add buffalo sauce, brown sugar, rice vinegar, sriracha, minced garlic, and honey to a pot or saucepan, bring to a simmer to thicken into a glaze, once it‘s thick, add the butter, red pepper flakes, and spring onion, mix to combine and then take off the heat and transfer to a large bowl. Set aside.
Step 2
In a shallow bowl, whisk together cornstarch, a pinch of salt, and a pinch of black pepper.
Step 3
In small deep bowl, whisk together eggs, a pinch of salt, and a pinch of black pepper.
Step 4
Heat vegetable oil to 180°C in a frying pan, dredge a few shrimps first in the wet batter, letting any excess drip off, and then into the dry, shaking any excess off, Once the oil is hot, drop the shrimps in, fry in batches, Once golden, about 6 to 7 minutes, take out and drain any excess oil on a wire rack.
Step 5
Toss the shrimp in the sauce, garnish with chopped red chili, spring onions, sesame seeds and enjoy with rice, noodles, or veggies.
