Instructions

Step 1
Preheat the oven to 180°C or 350°F.
Step 2
Line a loaf tin with baking paper.
Step 3
Combine all the dry ingredients, except the chocolate, in a large mixing bowl.
Step 4
Stir to combine.
Step 5
In another mixing bowl, whisk together the wet ingredients.
Step 6
Pour the wet ingredients into the dry mixture and stir well until incorporated.
Step 7
Stir in two-thirds of the chocolate chunks.
Step 8
Pour the batter into the lined baking tray.
Step 9
Sprinkle the remaining chocolate chunks over the top and bake in the preheated oven for 45 minutes.
Step 10
Remove from the oven and allow to cool in the tin for a further 10 minutes before slicing.
Step 11
Keep any leftovers stored in an airtight container in the fridge for 3-4 days.
Step 12
Warm or toast before serving.
