Vegan Grapefruit “Gummie Worms”

This was always a fun play on words for a quick and easy candied grapefruit peel. That being said, it’s as close as you can get to a sweet&sour gummie worm.
Best enjoyed fresh while still soft or you can leave them out to dry for a firmer crystallized peel.

Instructions
Step 1
1. Using a channel knife cut strips of grapefruit peel working from the top to bottom.
Step 2
2. Place peels into a pot with warm water and bring to boil. Once boiling, remove from heat and pour over a strainer. Place peels back into the pot and repeat this 2 more times.
Step 3
3. After peels have been strained from their 3rd blanch, cover with warm water and add equal parts sugar to water.
Step 4
4. Bring this to a boil and then lower to a simmer for 10-20min until peels become translucent.
Step 5
5. Strain out the peels and toss in a bowl of sugar to coat.
Step 6
6. Remove peels from sugar gently shaking off excess sugar. Optional: sprinkle a tiny amount of citric acid onto the peels to give them a sour kick.
Step 7
7. Best enjoyed fresh or allowed to dry and crystallize for a firmer texture
