Instructions

Step 1
Boil udon in hot water according to package directions. Drain and set aside.
Step 2
slice green onions, and set aside.
Step 3
In a medium soup pot, add soy sauce, mirin, sake, sugar, fish stock powder, and water. Set heat to medium-low and let it come to a slow boil.
Step 4
Add Udon, green onion, beef, and cook about 4 minutes.
Step 5
Add arugula, and cook another 30 seconds.
Step 6
Serve with egg yolk.
