Instructions
Step 1
Heat oil in a large dutch oven or pot. Add chicken and brown on both sides. Remove chicken and set aside.
Step 2
Add garlic and salt and cook for 30 seconds then add onion. Cook until onion softens.
Step 3
Drain and rinse the beans then add them to the pot along with half the seasoning mixture. Stir in the chicken broth and scrape the pot.
Step 4
Stir in the tomatoes and the other half of the seasoning mixture. Bring the pot to a slight boil and add in the brown sugar. Reduce heat to low and add in the chicken thighs and simmer for about 30 minutes.
Step 5
Remove and shred chicken thighs with a fork, then add the shredded chicken back to the pot and mix before serving
