Instructions

For the meatballs

Step 1
Mix beef, pork, breadcrumbs, onion, parsley, eggs, salt, and pepper together in a large bowl until thoroughly combined.
Step 2
Roll into meatballs, about 1/2 cup or 3.5 oz each. Dredge each one in flour.
Step 3
Heat 2tbsp butter in a large skillet over medium heat.
Step 4
Add the meatballs and brown, about 8 minutes on each side.
Step 5
Move meatballs to a plate. Melt the remaining butter in the same pan.

For the sauce

Step 6
Once melted, add the onions and reduce heat to medium low. Cook until onions are caramelized, about 15 minutes.
Step 7
Add the brown sugar and thyme, then cook for 1 minute, stirring constantly.
Step 8
Add the flour and stir to combine.
Step 9
Add the apple butter and vinegar, then stir to combine.
Step 10
Pour in the beef stock and add the bay leaves. Bring to a boil, then reduce heat and simmer, uncovered, for 25 minutes.
Step 11
Add the meatballs to the sauce and cook for another 15 minutes to heat through.
Step 12
Serve over french fries and enjoy!
