Vegan Rassolnik

Rassolnik is a delicious pickled cucumber soup and a classic among Russian cuisine soups. The soup's special flavor comes from gherkins, gherkin water and barley, which are among the main ingredients. You can vary the amount of gherkin water, depending on how sour you want the soup to taste.

Instructions

Step 1
Put vegetable broth and barley in a saucepan and cook for 30 minutes.
Step 2
Cut the onion into small pieces and fry them in vegetable oil in a pan, stirring, for 1 minute.
Step 3
Thinly slice the carrots, add them to the onions in the pan and stir-fry for 3 minutes.
Step 4
Peel and cut potatoes into small cubes.
Step 5
Add the potatoes, carrots, and onions to the barley in the saucepan and cook for 10 minutes.
Step 6
Cut pickled cucumbers into small cubes and fry them in vegetable oil in a pan for 1 minute, stirring.
Step 7
Add the tomato juice to the pickles in the pan and fry for another 3 minutes.
Step 8
Add the gherkins with the tomato juice to the barley in the saucepan and cook for another 5 minutes.
Step 9
Add the pickle water, bay leaves and chopped parsley, season the soup with salt and pepper and cook for another 3 minutes. Then let Rassolnik rest for 15 minutes.
