Chicken Salad in Chipotle Cream Sauce

This easy, high protein, low carb chicken salad is not only delicious but perfect for the rising temperatures! To save time use a rotisserie chicken or store bought tostadas.

Step 1
1. Bring water to a boil and add chicken breast, 1 tbsp salt, bay leaves, 1/4 onion, and 2 garlic cloves. Bring down to a simmer and boil for 20-30 minutes depending on size of chicken.

2. Once cooked, shred and put to the side.
Step 3
3. To a blender add the chipotle salsa (the more the spicier), Greek yogurt, light mayonnaise, seasonings to taste, jalapeño mustard, and almond milk. Blend well.

4. To a bowl, add 4 oz chicken, 1.5 c shredded lettuce, and chipotle crema.
Step 5
5. Air fryer tostadas: Air fry tortillas at 390° F for 4 minutes, flip, and cook for an additional 3 minutes. (The tortilla will fly if you don’t put it under the tray or weigh it down with an air fryer safe dish)
Step 6
6. 1 SERVING: divide the chicken salad amongst 3 air fryer tostadas. Add toppings of choice - I added 28 G queso fresco.
