Instructions
For the chick peas
Step 1
Drain chick peas and add to pan with olive oil and seasonings.
Step 2
Cook on the stove until chick peas are slightly dry and spices are pungent.
Assembling the salad
Step 3
Chop vegetables in to bite size pieces and mix with cooled chick peas.
Step 4
Drizzle salad lightly with olive oil and lime juice.
Step 5
Add fresh chopped cilantro, salt and pepper to taste.
