Black Bean Butternut Squash Turkey Soup

Low sodium healthy delicious soup. Health info for sodium incorrect. WHISK app very limited on actual ingredients by brand. It would only allow Rotel not Rotel Original low sodium tomatoes and chilies. Same for black beans. Lose It app much better for creating your own recipes and more accurate on nutrition information. However when I tried sharing the recipe from Lose It app it did not work.

Step 1
Drain and rinse black beans. Puree one can of black beans. Butternut squash put small slices with paring knife all around for steam to escape. 2 lb cook microwave 8-10 minutes. Let cool. Peel and dice. Add all ingredients to slow cooker or Dutch oven. Cook med heat one hour. Simmer lower heat until desired consistency.

Rotel-use original low sodium

Turkey broth I make myself. I used turkey carcuss from smoked thanksgiving turkey plus wings and legs. 3 stalks celery, 1 quartered white onion, 3 bay leaves, 8 baby carrots, 1 teaspoon black pepper. Add water to cover. Simmer 3 hours. Use colander to drain.
Step 4
Cajun seasoning use salt free or make your own. Commercial brands loaded with sodium.
