Instructions
Step 1
Preheat oven to 175C or 350F.
OvenPreheat
Step 2
In a medium bowl, whisk together all the ingredients, except for the pecans. Whisk until it's a smooth paste.
Step 3
Add the pecans into the bowl and stir until the sugar mixture has coated the nuts evenly.
Step 4
Transfer pecans onto a large parchment lined baking tray. Spread the pecans out in one layer so they bake evenly.
Step 5
Sprinkle a little more sea salt over the top. Bake for 10-12 minutes or until the sugar coating has gone a deep amber colour.
Step 6
Remove from oven and let cool. The sugar will harden as they cool and you'll be able to break the pecans apart easily. Transfer candied pecans to an airtight container for up to one week.
Ideas for how to use these nuts:

*Served alongside creamy French cheese on a cheese board.
*Sprinkled on a spinach salad with cranberries, crumbly cheese and balsamic vinaigrette.
*If you omit the cayenne and pepper, and add a bit of cinnamon, they're an excellent topping on pumpkin or carrot cakes.
