Ingredients

1 ½ cupsvegetable oil
3eggs

½ cupsugar
1 cuphoney
¾ cupcoffee
lukewarm
1 teaspoonorange zest
packed, grated
1 ½ cupsall-purpose flour
1 cupdark rye flour
2 teaspoonsbaking powder
½ teaspoonbaking soda
½ teaspoonkosher salt
2 teaspoonsground cinnamon
¼ teaspoonground cloves
¼ teaspoonground ginger
¼ teaspoonground allspice
Instructions
Step 1
Preheat oven to 350F. Generously grease a 9x5 loaf pan with Pam or oil.
Step 2
In a large bowl, whisk together the oil, eggs, sugar, honey, coffee, and orange zest. In a separate large bowl, whisk together the flours, baking powder, baking soda, salt, cinnamon, cloves, ginger, and allspice.
Step 3
Make a well in the center of the flour mixture and pour in the egg mixture, then stir with a fork until the batter is smooth and free of lumps.
Step 4
Pour the batter into the prepared pan and bake for 50 - 55 minutes, until set in the middle – the cake should hold firm when pressed lightly on the top. Be careful not to leave it in the oven too long.
Step 5
Let the cake cool in the pan for at least 30 minutes before very carefully inverting it and removing it from the pan.
