Green onion, spring onion, and scallions are all the same thing. You might find them named as any of the three in your local shop, but it makes no difference to the end product. Sometimes they’re called the Welsh Onion – but this is quite misleading as they’re not from Wales at all! Scallions originated in Asia, which is part of the reason they’re so popular in Chinese cuisine. You might also be surprised to hear that you can harvest green onions in two different ways. Some plants never grow the big bulbs of regular white onions and will still be scallions once they’re matured. However, you can also harvest them when they’re very immature from regular bulb-forming onions. Either way, their flavor is mild, and you can eat almost the entire plant. The bulb is often used in place of regular onion, while the green tops and the stem are frequently used as garnishing or seasoning. They can also be pickled for a milder alternative to regular pickled onions. Green onions are closely related to chives, leeks, shallots, and garlic. Like most other vegetables, they’re low calorie and packed with nutrients. Spring onions are particularly rich in Vitamin A – one cup will cover your entire requirement for the day. They’re also high in Vitamin K. So go ahead and spoon them over soups, salads, stir fries, and anything else you can think of for a mellow boost of flavor and nutrition.
