Ingredients
2 servings
2 tspvegetable oil
2chicken breasts
cut into bite - sized pieces
1green pepper
diced
1red pepper
diced
2spring onions
cut into 3 cm pieces
2 clovesgarlic
finely chopped
ginger
thumb sized, finely chopped
100gtinned pineapple chunks
1 Tbspcornflour
½ Tbspsoft light brown sugar
2 Tbsppineapple juice
from the tin
1 Tbspdark soy sauce
1 ½ Tbsprice vinegar
1 Tbsptomato ketchup
Instructions
Step 1
Heat the vegetable oil in a wok over a high heat and cook the chicken for 5 minutes until caramelised, then scoop out onto a plate. Stir-fry the peppers and spring onions for 5 minutes until charred. Add the garlic and ginger, and cook for 1 minute.

Step 2
Put the cornflour and sugar into a small bowl, stir in the pineapple juice, soy and vinegar until smooth, then add the ketchup and 100ml of water. Pour into the pan, add the chicken and cook for 5-10 minutes or until the sauce has thickened and the chicken is cooked through. Stir through the pineapple chunks for the final 2 minutes of cooking to warm through.

Under 30 minutes
This was very tasty and quick to make I didn’t deviate from the recipe except that I used Tamari sauce instead of soy sauce. Great dish!

I had never really had sweet and sour chicken but my husband had mentioned it a couple times, so I decided I'd try this.
It was delicious! I used the Pineapple juice instead of water and added fresh jalapeños and paired it with a multigrain rice.
He said I definitely need to make it again
