Instructions
Step 1
Lightly coat a large nonstick skillet with cooking spray and set over medium-high heat until hot.
Step 2
Add the beef and cook, breaking into smaller pieces with a wooden spoon, until browned, 5 to 7 minutes. Stir in the garlic powder and smoked paprika and cook for 30 seconds or so.
Step 3
Add the chicken broth, tomatoes, macaroni, and 1/2 teaspoon salt and bring to a simmer. Cook, stirring often, until the macaroni is tender and the sauce has thickened, 10 to 15 minutes.
Step 4
Remove skillet from the heat and stir in the cheese until well blended and melted.
Step 5
Divide mixture evenly among six plates or bowls. Sprinkle with scallions.

Added onions while cooking the meat. Put diced pickles and thousand Island on top. Family approved 😋
This was pretty good! I'm putting the bland tag on it because while I really enjoyed it, I feel like it could use something else to really spruce it up. I would probably mince up garlic instead of powder. I added garlic powder and more paprika a second time rather than following the instructions, garnished with red pepper flakes, and I used 2.5cups of chicken broth instead of 3. I also added extra cheese. Really good though!
A total hit! This was a true 30 minute, one pan meal and I couldn't be happier. It was so easy and so delicious! I added leftover sauteed mushrooms from a previous meal and can also see peas or bell peppers in this. This has so much flavor as it is but I think next time I'll try fire roasted diced tomatoes just to give it a kick. Will absolutely be adding this to our regular rotation.

Added some cherry tomatoes to the mix, cooked a bit longer but worth it. the dish was amazing

Omitted the garlic added a bit more paprika and use smoked lamb stock not chicken stock a as well and twice the amount of pasta homemade.
