Leek & potato soup

Warm

I added some garlic powder, turkey bacon (cooked it first in the pot, took out and then added last), added some broccoli that I had just cooked. I also used the green part of the leeks.

Skipped the heavy cream

Delicious, wouldn't change anything

Follow this recipe exactly and it's delicious and perfect! Try and be quick with the blending because it looses heat quickly, or just reheat it. Of course I love it with a nice baguette. I don't think the double cream is necessary, and it's more like 4 filling servings than 6-8 starter servings. I now prefer this over mushroom soup!

Hearty and warming but with a lovely delicate flavour. I leave the green part of the leeks in because I love the resulting delicate pale green colour. To reduce the calorie count, I replaced the double cream with reduced-fat Philly-type soft cream cheese - just as nice. Recipe says it's for 6-8 portions, but that would be very small servings: we found it gave 4 good-sized servings.

Delicious J+N+H but didn’t add the cream as it was creamy already.

A wonderfully easy and tasty soup. Wouldn’t change anything about the recipe. Had it with a side of garlic bread and it was incredible.
