Lighter Potato and Leek Soup

I was craving potato leek soup but I didn't want to blow my new year's diet. Here is a healthier version than the traditional.

Instructions

Step 1
In a large pot, saute the onions in the olive oil 2 min, then add the leeks and celery. Saute 3 more min or until soft.
Step 2
Add the potatoes, broth and 1 qt water, and green onions. Cover and bring to a boil. Turn heat to medium and cook 15-30 min, sitting occasionally. You want to cook it long enough that you can pierce a potato slice easily with a fork.
Step 3
With an immersion blender or blending in batches, blitz about 3/4 of the soup. Be careful because the soup will be very hot.
Step 4
Return the pot to the heat and stir in milk. Season to taste with salt and pepper. Bring the soup back to a high simmer, then serve hot.
