Instructions
Step 1
Preheat the oven to 350°F. Line 1-2 large baking sheets with parchment paper. Mix together the flour, oatmeal, raisins, cinnamon, baking soda and salt, then set aside.
Step 2
In another bowl add the honey, coconut oil, eggs and vanilla extract. Whisk for a few minutes until fully combined. Now add them to the dry mixture, and mix.
Step 3
Place in the fridge for 10-20 minutes (I sometimes skip this step).
Step 4
Scoop out the cookie dough using an ice cream scooper or a large spoon; make sure they are 2 inches apart. Bake for 12-13 minutes. Allow to cool for 10 minutes before serving. Enjoy!
