One Pan Creamy Tomato Chicken Boursin Orzo

Ingredients

1.5 lbsChicken Thighs
cut into 1 inch pieces, can also use chicken breast
2 Tbspextra virgin olive oil
1 Tbsplemon juice
1 tspsalt
½ tspblack pepper
¾ tspitalian seasoning
¼ tspgarlic powder
¼ tsponion powder
¼ tspred pepper flakes
1shallot
minced
4cloves garlic
minced
¼ cupWhite Wine
can also use water or broth
1 cupOrzo
uncooked
2 Tbsptomato paste
10 ozCherry Tomatoes
2 cupsChicken Broth
add more as needed
salt
to taste
pepper
to taste
2.6 ozBoursin Cheese
I used half a package of Garlic & Herb Boursin Cheese
2 cupsSpinach
I used a Spinach & Arugula mix
¼ cupParmesan Cheese

Instructions
Chicken Instructions
Step 1
In a large bowl, combine all of the chicken ingredients. Let it marinade for about 15 minutes while you prep the other ingredients.
Step 2
Heat a large high-rimmed pan over medium-high heat. Add a drizzle of olive oil. Pour in the marinaded chicken. Cook for about 5 minutes a side. Then to continue to toss the chicken for another few minutes until golden and cooked through. Remove to a plate.
Orzo Instructions
Step 3
In the same pan over medium heat, add the minced shallot and garlic. Cook for 1 minute stirring constantly. Deglaze the pan with wine, broth, or water. Use a wooden spoon to scrape up any stuck bits. Cook for 2 minutes until the liquid cooks off.
Step 4
Add the uncooked orzo and tomato paste. Stir to combine. Cook for 2 minutes to let the orzo toast.
Step 5
Add the cherry tomatoes and chicken broth. Season to taste with salt and pepper. Bring to a boil then lower the heat to a simmer. Stir often so the orzo doesn't stick to the bottom of the pan. It will take about 12-15 minutes for the orzo to cook through. Add additional broth if needed to cook the orzo if it's absorbing too quickly.
Step 6
Once the orzo is cooked through, turn the heat to low. Add the Boursin cheese and mix until well combined and melted. Add back the cooked chicken and stir to combine. Finally, add the spinach and stir to combine. The spinach should wilt quickly.
Step 7
Serve immediately with freshly grated parmesan cheese as desired.
