Cashew Chicken

I have been making this using Daring Chicken, and my family loves it. Pairing it with a simple fried rice makes for a delicious and filling plant-based meal. 😋

I used chicken thighs because they don't tend to dry out when reheated. Double the sauce if you're making this for meal prep.

Swapped out the chicken for Daring plant based chicken instead. One of the best vegan dishes I have ever had! We also made fried rice to go along with and added broccoli.YUM!

I reduced the soy sauce to 2 table spoons, then it tastes great, otherwise too salty!

So good! I skipped the rice and served over stir fried broccoli, carrots and onion.

We used couscous which was good, but should have gone with white rice. Also, I think shallots would be a nice garnish on top. But overall, it was very good, and simple to make.

So good. Crowd friendly.
