Ingredients

1can black beans
drained and rinsed

½ cupcorn

1capsicum
small, red bell pepper

1red onion

1 cupbaby spinach

4tortillas
large

olive oil

1 tspcumin

½ tsppaprika

½ tspcoriander

½ tsporegano

¼ tspsalt
iodised

pickled jalapenos

8cherry tomatoes
diced

0.5avocado
diced

½ cupcoriander leaves
chopped

½ cupcashews

1chipotle in adobo
+ 1 tbsp sauce

½ cupsoy milk
or another plant milk

2 Tbspnutritional yeast

½ tspsalt
Instructions
Step 1
Begin by soaking the cashews in boiling water for 30 minutes. Then, in a small high-speed blender, combine all the queso ingredients and blend until smooth.
Step 2
Dice the red onion and capsicum. In a pan on medium heat, add a bit of olive oil and the onion. Cook until the onion is softened.
Step 3
Add the capsicum, corn, black beans, and spices to the pan. Cook for an additional 2-3 minutes.
Step 4
Spread the cashew queso on half of a tortilla, then add some of the black bean mixture and spinach. Top with more cashew queso and fold the tortilla in half.
Step 5
Transfer the filled tortilla to a non-stick pan heated on medium to low heat. You can brush a bit of olive oil if needed. Cook until the tortilla is golden, then flip and cook the other side.
Step 6
Repeat the process with the remaining tortillas and filling. Serve the quesadillas with your favorite toppings.
