Instructions
Step 1
Cut the ends off your zucchini and spiralize it with the smallest noodle setting.
Step 2
Place the noodles in between two paper towels or a clean dish towel and press out any excess liquid.
Step 3
Heat the oil in a pan over medium heat and add the zoodles.
Step 4
Use tongs to toss for 2 minutes.
Step 5
Add the salt and garlic powder and continue to toss for another 2 minutes.
Step 6
Transfer the zoodles to a bowl.
Step 7
Add a mound of zoodles back to the pan in a circular, nest shape. Use the tongs to create a divot hole in the center. I cook two nests at a time, but you can do however many fit in your pan.
Step 8
Crack an egg in the hole and cover the pan with a lid. Cook on medium for about 5 minutes until the clear of the eggs turns white.
Step 9
Transfer to a plate.
Step 10
Sprinkle with grated Parmesan, fresh pepper, and garnish with fresh herbs.
