The reason being is that they are so delicious, moreish and full of tasty bits that no meat-eater could refuse them. This cowboy beans recipe is how it’s prepared in Mexico, cooked with any delicious meat you can find, bacon, sausage, chorizo, sometimes pork etc. Served like a soup or stew, and simply garnished with finely diced onion, coriander and lime juice.
