Ingredients
12 servings
1 ½ cupsalmond flour
⅓ cuptahini
⅓ cuppeanut butter
or almond butter, i used wild friends chocolate pumpkin peanut butter for this recipe
¼ cuppumpkin puree
¼ cupcoconut sugar
or brown sugar
¼ cupmaple syrup
2flax eggs
2 tbs ground flax+5 tbsp water
1 tspvanilla
2 tsppumpkin spice
or cinnamon
¼ tspsalt
1 cupdark chocolate chips
1 tspbaking soda
1 tspbaking powder
Instructions
Step 1
Prepare a baking sheet with parchment paper or silicone baking mats.
Step 2
In a large mixing bowl, combine all ingredients except for baking powder and baking soda and form a dough ball.
Step 3
Chill the dough for 30 min. While dough is chilling, preheat your oven to 350.
Step 4
After dough has chilled, sprinkle on baking powder and baking soda and mix thoroughly. Scoop dough using a cookie scoop (or 3 tablespoons worth) and place onto your prepared baking sheet.
Step 5
Add additional chocolate chips to the tops of the dough if desired. This will make your cookies have those perfectly placed chips on the tops of them!
Step 6
Press each cookie down into a disc to flatten them. These won’t rise much while baking so flattening them out will create more of a cookie shape.
Step 7
Bake for 12 minutes and allow to cool for 10 minutes before serving.
Step 8
Store in an airtight container for one week or freeze for up to 3 months.
