Ingredients

1 cuprice flour
1 ½ tspturmeric powder
1 Tbspcornstarch
optional, but helps makes it crispier
1 ¼ cupwater
cold
2 stalksgreen onions
2 cupsbean sprouts
1 poundshrimp
1 poundpork belly
you can use thinly sliced pork loin for less fattier cut
¼ cupavocado oil
¼ cupfish sauce
0.25lime juice
¼ cuptable sugar
⅓ cupwater
hot
1 ½ Tbspminced garlic
2thai chilis
Instructions
Step 1
In large bowl mix rice flour, turmeric powder, cornstarch, sliced green onions and cold water.
Step 2
In large skillet heat ½ tbsp. oil to medium high heat and add 2-3 pieces of thinly sliced pork belly and 2-3 pieces of shrimp. Cook for 1-2 minutes of both sides, turn heat to high and then pour in a thin layer of batter. Top with some bean sprouts and cover with a lid for 1-2 minutes, then fold in half and cool on rack. Repeat with remaining batter and ingredients.
Step 3
For the Vietnamese vinaigrette mix fish sauce, lime juice, sugar, hot water, garlic and sliced Thai chilis.
