Ingredients

2 Tbspvegan butter
or neutral oil
4 Tbspcornstarch
1 Tbspdried porcini mushroom powder
½ Tbsptamari
1 tspgarlic powder
1 tsponion powder
2 cupsvegetable stock
¼ cupoat milk
or other plant-based milk
4 cupspotatoes
peeled and roughly chopped
1 ½ cupsoat milk
or other plant-based milk
½ cupvegan butter
1 tspnutmeg
salt
to taste
pepper
to taste
Instructions
Step 1
For the gravy, heat the butter, cornstarch, porcini mushroom powder, garlic and onion powder in a saucepan over medium-high heat until the butter has melted.
Step 2
Slowly incorporate the vegetable stock, stirring vigorously to remove any clumps. Bring the mixture to a boil until the gravy thickens.
Step 3
Stir in the tamari and milk, and cook for another minute. Remove from the heat and allow to cool down for 5 minutes before serving.
Step 4
For the mashed potatoes, add the potatoes and 1 tsp of salt to a large saucepan, cover with cold water, and bring to a boil. Cook for 10 to 15 minutes until the potatoes are easily pierced with a fork. Drain.
Step 5
Mash the potatoes using a potato masher, leaving a few pieces for texture. In a separate saucepan, heat the milk and butter for 2 minutes on low heat until the butter has melted. Slowly incorporate the liquid into the mashed potatoes, stirring until fluffy. Season with nutmeg, salt and pepper.
