Coconut Curry Chicken

I didn't have red curry so I substituted tomatoe paste which I'm sure is the wrong thing to do but it was delicious and also not spicy. Also didn't have coriander so def want to try that next time. Only used one tbsp of brown sugar. Also didn't add fish oil, nuts, or cilantro/basil

I did the recipe almost exactly as directed with the exception of using monkfruit brown sugar instead of regular brown sugar and then topped it with some green onions in addition to the cilantro. Man, this is good stuff! It took a little longer than anticipated as it was my first go around but this is definitely going to be something I do afain!

Good recipe. Easy ingredients. Great flavor. Added sliced carrots and diced potatoes. Very good

I halved the red curry paste, it was very good and still spicy! Loved it.

Insanely spicy. The red curry paste should not be played with.
