One Pot Pasta with Chicken, Spinach, Mushrooms, and Tomato

Ingredients
3 servings
1 lbChicken Breast
Boneless Skinless, Cubed
salt
to taste
pepper
to taste
2 TbspOlive Oil
Divided into two halves
1Shallot
Diced
4cloves garlic
minced
1 cupbaby bella mushrooms
sliced
1 cupTomatoes
Halved, Quartered, or Chopped depending on size
½ tspitalian seasoning
½ tsppaprika
½ tspgarlic powder
¼ tspRed Pepper Flakes
Add more or less depending on heat preference
2 cupschicken broth
½ cupheavy cream
8 ozPasta
Uncooked, Short Shape like Bowties
3 ozBaby Spinach
½ cupMozzarella
or Parmesan Cheese, Shredded
⅛ cupParmesan Cheese
Grated, to serve
Instructions
Step 1
Season cubed chicken breast with salt and pepper.
Step 2
Heat 1 tbsp of olive oil over medium high heat in a dutch oven or large pot.
Step 3
Add chicken to dutch oven for about 8 minutes or until cooked through. Remove onto plate.
Step 4
Heat the other tbsp of olive oil and add shallot and garlic and cook for 2 minutes.
Step 5
Add mushrooms, tomatoes, italian seasoning, paprika, garlic powder, red pepper flakes, and salt and pepper to taste. Stir and cook for a few minutes.
Step 6
Add chicken broth and heavy cream and let it get to a boil.
Step 7
Once boiling, add uncooked pasta and cook until pasta is al dente.
Step 8
Add back cubed chicken, spinach, and shredded cheese.
Step 9
Serve immediately with grated parmesan cheese.
