Mexican Cowboy Beans, or “Frijoles Charros”, are the secret to the best carne asadas or barbecues in the north of Mexico. The reason being is that they are so delicious, moreish and full of tasty bits that no meat eater could refuse them. This cowboy beans recipe is how it’s prepared in Mexico, cooked with any delicious meat you can find, bacon, sausage, chorizo, sometimes pork etc. Served like a soup or stew, and simply garnished with finely diced onion, coriander and lime juice.
